At the moment we are running Usoft 8 (and planning an upgrade) but are looking for best practises for configuring anti virus. Is there a document with exclusions that must be set at the client?

I don't think there is a ready made guide, it is a good suggestion!
I've checked with engineering , the only consideration is when an antivirus interferes in locations that where USoft does file I/O, then maybe performance is impacted. An example is if a virus scan interferes with the USoft_temp, USoft_log directories, these are directories where USoft performs file I/O, JIT compilation fore example occurs in usoft_temp. For development this could be web publication directories. So temp directories would be something to consider excluding. To locate these directories you can use the following commands:
